We use 100% Koshitanrei rice grown under contract in the terraced fields of the local Ojiya area, and by using a special blend with different polishing rates of 30% yeast rice and 60% koji rice and rice for brewing, we have been able to bring out the rice's natural powerful flavor in addition to the refined aroma.
Like "Tatomo Junmai Daiginjo Handmade Premium," this is a masterpiece that is made by hand in small batches at every stage.

Takanoi Sake Brewery

We aim to make sake that is pleasing, comforting, and safe to drink, and we use 100% rice produced in Niigata Prefecture, especially "Koshitanrei" rice grown in terraced fields in Ojiya City. We make sake with a clean, refreshing taste that makes use of Ojiya's rich nature and melting snow water, and we are always striving to improve the quality of our sake by incorporating new brewing methods while preserving tradition.
